- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This should take about 2-3 minutes with an electric mixer.
- Beat in the eggs one at a time, then add the vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing just until combined.
- Stir in the rolled oats, chocolate chips, and walnuts (if using) until evenly distributed throughout the dough.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. For perfectly round cookies, you can roll the dough into balls.
- Bake for 10-12 minutes, or until the edges are golden brown but the centers are still slightly soft. The cookies will continue to set as they cool.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Don't overmix when adding flour and oats. For thicker cookies, chill dough for 30 minutes before baking. Use high-quality chocolate chips for best flavor. Old-fashioned rolled oats work best for texture.
