Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly with butter.
- In a small bowl, combine the flour, granulated sugar, brown sugar, and cinnamon. Add the cold cubed butter and mix with a fork or your fingers until the mixture resembles coarse crumbs. Set aside.
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together the melted butter, buttermilk, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix. Fold in the blueberries.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle the streusel topping generously over each muffin.
- Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack.
Notes
Use fresh blueberries for best results. Do not overmix the batter to avoid dense muffins. Buttermilk can be substituted with a mixture of milk and lemon juice or vinegar. For extra crunch, add chopped nuts to the streusel topping.
