- Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set aside.
- Prepare the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper.
- Mix the wet ingredients: In a large bowl, combine the melted butter and sugar. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Combine the ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the shredded zucchini, cheddar cheese, chives, thyme, and minced garlic.
- Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
Drain the zucchini well to avoid excess moisture. Customize herbs or add a crunch with Parmesan or breadcrumbs. Store in an airtight container for up to 3 days at room temperature or refrigerate for up to a week.
