  • 2 cups heirloom tomatoes, sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the puff pastry sheet on a lightly floured surface. Cut it into rectangles or circles, depending on your preferred tart shape.
  3. In a bowl, mix together the ricotta cheese, mozzarella cheese, Parmesan cheese, minced garlic, dried basil, dried oregano, salt, and pepper.
  4. Spread a layer of the cheese mixture onto each puff pastry piece, leaving a small border around the edges. Arrange the sliced heirloom tomatoes on top of the cheese mixture.
  5. Place the tarts on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the puff pastry is golden brown and the cheese is bubbly.
  6. Remove the tarts from the oven and let them cool slightly. Garnish with fresh basil leaves and a drizzle of olive oil before serving.

Notes

For the best flavor, use ripe and colorful heirloom tomatoes. To avoid a soggy crust, pat the tomato slices dry with a paper towel before placing them on the cheese mixture. These tarts are best served warm, straight from the oven.
