  • 8 slices of soft white or whole wheat bread
  • 1 large cucumber, thinly sliced
  • 8 oz cream cheese, softened
  • 2 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 tbsp butter, softened (optional)

Method

  1. In a small bowl, mix the softened cream cheese, chopped dill, lemon juice, salt, and pepper until smooth.
  2. Wash and thinly slice the cucumber. Use a mandoline or a sharp knife for even slices and pat them dry with a paper towel.
  3. Spread a thin layer of butter on one side of each bread slice (optional). Spread the cream cheese mixture evenly on the unbuttered side of 4 bread slices, layer the cucumber slices on top, and cover with the remaining bread slices.
  4. Trim the crusts off the sandwiches, cut each into quarters or smaller rectangles, and serve immediately or chill for 30 minutes.

Notes

Use soft bread like brioche or white sandwich bread for best results. Assemble sandwiches just before serving to prevent sogginess. For variations, add thinly sliced radishes or fresh mint to the filling.
