- Cook the pasta according to package directions until al dente. Drain and set aside.
- While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add cubed chicken and season with salt and pepper. Cook until golden brown and cooked through, about 6-8 minutes.
- Reduce heat to medium and add the ranch seasoning mix to the chicken. Stir to coat evenly.
- Add the softened cream cheese and chicken broth to the skillet. Stir continuously until the cream cheese melts and creates a smooth sauce.
- Add the cooked pasta to the skillet and toss to coat with the sauce. Stir in the sour cream and half of the shredded cheeses.
- Top with remaining cheese, cover, and let simmer for 2-3 minutes until cheese melts. Garnish with green onions before serving.
Notes
For the best results, make sure your cream cheese is fully softened before adding it to the skillet to prevent lumps in your sauce. You can also try adding a pinch of garlic powder or smoked paprika for extra flavor depth.
