- Cook the pasta: Bring a large pot of salted water to boil. Add pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
- Prepare the salmon: While pasta cooks, pat salmon dry and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook salmon for 4-5 minutes per side until golden and cooked through. Remove from skillet and set aside.
- Make the cream sauce: In the same skillet, add minced garlic and cook for 1 minute until fragrant. Pour in heavy cream and bring to a gentle simmer. Stir in parmesan cheese until melted and sauce thickens slightly.
- Combine everything: Flake the cooked salmon into chunks. Add cooked pasta, salmon chunks, and mixed greens to the cream sauce. Toss gently to combine, adding reserved pasta water as needed to create a silky sauce.
- Add final touches: Stir in lemon juice and zest. Season with additional salt and pepper if needed. Garnish with fresh herbs before serving.
Notes
Use high-quality salmon, don't overcook the greens, and save pasta water to help the sauce cling perfectly to the pasta.
