- Cook pasta according to package directions until al dente, then drain and set aside
- Heat olive oil in a large skillet over medium-high heat, season salmon with salt and pepper, and cook for 4-5 minutes per side until golden and cooked through, then remove from skillet
- In the same skillet, sauté minced garlic for 30 seconds until fragrant, then add chicken broth to deglaze the pan
- Add heavy cream, sun-dried tomatoes, and Italian seasoning, bring to simmer, then reduce heat to low
- Stir in grated Parmesan cheese until melted and smooth, then add fresh spinach and cook until just wilted
- Flake cooked salmon into bite-sized pieces and add to sauce along with cooked pasta, stirring gently to combine everything evenly
Notes
Use high-quality salmon fillets and freshly grated Parmesan cheese. Sauce thickens as it cools, so serve immediately for optimal creaminess. Can customize with mushrooms, artichoke hearts, or different herbs.
