  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

  1. Cook pasta according to package directions until al dente, then drain and set aside
  2. Heat olive oil in a large skillet over medium-high heat, season salmon with salt and pepper, and cook for 4-5 minutes per side until golden and cooked through, then remove from skillet
  3. In the same skillet, sauté minced garlic for 30 seconds until fragrant, then add chicken broth to deglaze the pan
  4. Add heavy cream, sun-dried tomatoes, and Italian seasoning, bring to simmer, then reduce heat to low
  5. Stir in grated Parmesan cheese until melted and smooth, then add fresh spinach and cook until just wilted
  6. Flake cooked salmon into bite-sized pieces and add to sauce along with cooked pasta, stirring gently to combine everything evenly

Notes

Use high-quality salmon fillets and freshly grated Parmesan cheese. Sauce thickens as it cools, so serve immediately for optimal creaminess. Can customize with mushrooms, artichoke hearts, or different herbs.
