  1. Prepare the zucchini by washing and drying them thoroughly. Cut off the ends, then slice each zucchini into ½-inch thick sticks, similar to French fry shapes.
  2. Set up your breading station with three shallow bowls. Place flour in the first bowl, beaten eggs in the second, and in the third bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  3. Working with a few zucchini sticks at a time, coat them first in flour, then dip in the egg mixture, and finally press into the breadcrumb mixture until evenly coated. Place the coated sticks on a baking sheet.
  4. Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray. Arrange the zucchini fries in a single layer, making sure they don't touch each other for even cooking.
  5. Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy. You may need to work in batches depending on your air fryer size.
  6. Serve immediately with your favorite dipping sauce.
