- Prepare the vegetables by washing and cutting the potatoes, carrots, and onion. Place them in the bottom of your crock pot.
- In a small bowl, mix together the melted butter, minced garlic, Italian seasoning, paprika, salt, and pepper. This creates your flavorful garlic butter sauce.
- Arrange the chicken thighs on top of the vegetables in the crock pot. Pour the garlic butter mixture evenly over the chicken and vegetables.
- Pour the chicken broth around the edges of the crock pot (not directly over the chicken to keep the skin crispy).
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken is cooked through and vegetables are tender.
- Garnish with fresh parsley before serving. The chicken should be fall-off-the-bone tender and the vegetables perfectly cooked.
Notes
For best results, sear chicken thighs before adding to crock pot for crispy skin. Can customize with other root vegetables like parsnips or sweet potatoes. Reheats beautifully for up to 3 days.
