- Cook the pasta according to package directions until al dente. Drain and rinse with cold water to stop the cooking process.
- While pasta cooks, prepare the bruschetta mixture. In a large bowl, combine tomatoes, basil, red onion, and garlic.
- In a small bowl, whisk together olive oil and balsamic vinegar to create the dressing. Season with salt and pepper.
- Add the cooled pasta to the tomato mixture. Pour the dressing over everything and toss gently to combine.
- Fold in the mozzarella pearls. Taste and adjust seasoning if needed.
- Refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled or at room temperature.
Notes
Use the ripest tomatoes available - heirloom varieties add wonderful color and flavor. Wait to add basil until just before serving to keep it vibrant. Pairs well with grilled chicken or can stand alone as a light vegetarian meal.
