  • 4 cups cherry tomatoes, halved
  • 1/2 cup fresh basil leaves, chopped
  • 1/4 cup red onion, finely diced
  • 2 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1/2 cup mozzarella pearls or diced fresh mozzarella
  • Salt and pepper to taste
  • Optional: fresh oregano or parsley

Method
 

Instructions
  1. Cook the pasta according to package directions until al dente. Drain and rinse with cold water to stop the cooking process.
  2. While pasta cooks, prepare the bruschetta mixture. In a large bowl, combine tomatoes, basil, red onion, and garlic.
  3. In a small bowl, whisk together olive oil and balsamic vinegar to create the dressing. Season with salt and pepper.
  4. Add the cooled pasta to the tomato mixture. Pour the dressing over everything and toss gently to combine.
  5. Fold in the mozzarella pearls. Taste and adjust seasoning if needed.
  6. Refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled or at room temperature.

Notes

Use the ripest tomatoes available - heirloom varieties add wonderful color and flavor. Wait to add basil until just before serving to keep it vibrant. Pairs well with grilled chicken or can stand alone as a light vegetarian meal.
