  • 1/4 teaspoon sea salt

  1. Prepare the vegetables and fruit. Wash the cucumbers and strawberries thoroughly. Thinly slice the cucumbers and place them in a large mixing bowl. Hull the strawberries and slice them into quarters or halves, depending on their size.
  2. Combine the main ingredients. Add the sliced strawberries to the bowl with cucumbers. Thinly slice the red onion and chop the fresh mint leaves, then add both to the bowl.
  3. Make the dressing. In a small bowl, whisk together the honey, fresh lime juice, olive oil, sea salt, and black pepper until well combined. The honey should dissolve completely into the mixture.
  4. Toss and serve. Pour the dressing over the cucumber and strawberry mixture and gently toss to coat all ingredients evenly. If using feta cheese, sprinkle it over the top just before serving to maintain its texture.

Notes

Choose ripe but firm strawberries, slice cucumbers thinly, don't overdress, and prepare components separately for maximum freshness. Salad is best served immediately but can be refrigerated for up to 2 hours before serving.
