- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper
- In a large mixing bowl, whisk together the flour, baking soda, salt, and cinnamon
- Add the softened butter, granulated sugar, and brown sugar to the bowl and cream together until light and fluffy (about 2 minutes)
- Beat in the egg and vanilla extract until well combined
- Stir in the rolled oats and any optional add-ins like raisins or chocolate chips
- Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about 2 inches apart
- Bake for 10-12 minutes, or until edges are golden brown but centers still look slightly soft
- Let cookies cool on baking sheet for 5 minutes before transferring to wire rack to cool completely
Notes
Use butter that's softened but still cool to touch. Don't overmix once oats are added. Rotate baking sheets halfway through if baking two at once. Cookies freeze beautifully for up to 3 months.
