- Rinse the rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy.
- Heat olive oil in a medium saucepan over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
- Add the rinsed rice to the saucepan and stir to coat with the oil and onion mixture. Toast the rice for 2 minutes, stirring frequently.
- Pour in the vegetable broth and lemon juice. Add the dried oregano, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes.
- Remove from heat and let the rice stand covered for 5 minutes. Then fluff with a fork and stir in the fresh dill, parsley, and lemon zest.
Notes
Use fresh lemon juice rather than bottled for best results. Don't skip the toasting step - it adds nutty flavor and helps grains stay separate. Let rice rest after cooking for perfect fluffiness.
