  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • Zest of 1 lemon

  1. Rinse the rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy.
  2. Heat olive oil in a medium saucepan over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Add the rinsed rice to the saucepan and stir to coat with the oil and onion mixture. Toast the rice for 2 minutes, stirring frequently.
  4. Pour in the vegetable broth and lemon juice. Add the dried oregano, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes.
  5. Remove from heat and let the rice stand covered for 5 minutes. Then fluff with a fork and stir in the fresh dill, parsley, and lemon zest.

Notes

Use fresh lemon juice rather than bottled for best results. Don't skip the toasting step - it adds nutty flavor and helps grains stay separate. Let rice rest after cooking for perfect fluffiness.
