Ingredients

Ingredients
  • 4 ripe peaches, sliced
  • 8 oz burrata cheese
  • 2 cups mixed greens (arugula, spinach, or spring mix)
  • 1/4 cup fresh basil leaves, torn
  • 1/4 cup fresh mint leaves, torn
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • Salt and freshly ground black pepper to taste
  • 1/4 cup toasted pine nuts or slivered almonds (optional)

Method

Instructions
  1. Wash and slice the peaches into thin wedges. If the peaches are very firm, you can lightly toss them with a teaspoon of honey to enhance their sweetness.
  2. In a large bowl, combine the mixed greens, torn basil, and mint leaves. Gently toss to mix.
  3. Arrange the peach slices on top of the greens. Tear the burrata cheese into small pieces and place them over the peaches.
  4. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined.
  5. Drizzle the dressing over the salad. Sprinkle with toasted pine nuts or almonds if desired. Serve immediately and enjoy!

Notes

Choose ripe, juicy peaches for the best flavor. Handle burrata gently to avoid breaking it apart too much. Assemble the salad just before serving to keep the greens crisp.
