- Preheat your oven to 400°F (200°C). In a large bowl, toss the halved potatoes with 1 tablespoon of olive oil, half the minced garlic, oregano, thyme, paprika, salt, and pepper.
- Arrange the seasoned potatoes in a single layer on a large baking sheet or oven-safe skillet. Roast for 15 minutes while you prepare the chicken.
- In the same bowl, mix the remaining olive oil, garlic, parmesan cheese, and additional herbs. Coat the chicken breasts evenly with this mixture, pressing the parmesan coating firmly onto the chicken.
- Remove the baking sheet from the oven and push the potatoes to the sides. Place the coated chicken breasts in the center of the pan. Return to the oven and bake for 20-25 minutes, or until the chicken reaches 165°F internally and the potatoes are tender and crispy.
- Garnish with fresh parsley and serve immediately.
Notes
Make sure chicken breasts are similar in size for even cooking. Don't overcrowd the pan - potatoes need space to crisp up properly. Fresh herbs added in the last 5 minutes will elevate the flavor.
