  • 4 ripe peaches, halved and pitted
  • 4 cups arugula
  • 1 ball burrata cheese
  • 1/4 cup fresh basil leaves
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste

  1. Preheat your grill or grill pan to medium-high heat. Brush the peach halves with olive oil and place them cut-side down on the grill. Cook for 3-4 minutes until char marks appear and the peaches soften slightly. Remove from the grill and set aside.
  2. In a small saucepan, combine balsamic vinegar and honey. Simmer over low heat for 5-7 minutes until the mixture thickens into a syrupy glaze. Set aside to cool.
  3. In a large bowl, toss the arugula with a drizzle of olive oil, salt, and pepper. Transfer the arugula to a serving platter or individual bowls. Top with the grilled peach halves, torn burrata cheese, and fresh basil leaves.
  4. Drizzle the balsamic glaze over the salad just before serving. Enjoy immediately while the peaches are still warm.

Notes

Choose ripe but firm peaches for grilling. Enhance smoky flavor using a grill pan or cast-iron skillet if a grill is unavailable. Add toasted nuts for extra crunch. The balsamic glaze can be made ahead and stored for up to a week.
