- Preheat your grill or grill pan to medium-high heat. Brush the peach halves with olive oil and place them cut-side down on the grill. Cook for 3-4 minutes until char marks appear and the peaches soften slightly. Remove from the grill and set aside.
- In a small saucepan, combine balsamic vinegar and honey. Simmer over low heat for 5-7 minutes until the mixture thickens into a syrupy glaze. Set aside to cool.
- In a large bowl, toss the arugula with a drizzle of olive oil, salt, and pepper. Transfer the arugula to a serving platter or individual bowls. Top with the grilled peach halves, torn burrata cheese, and fresh basil leaves.
- Drizzle the balsamic glaze over the salad just before serving. Enjoy immediately while the peaches are still warm.
Notes
Choose ripe but firm peaches for grilling. Enhance smoky flavor using a grill pan or cast-iron skillet if a grill is unavailable. Add toasted nuts for extra crunch. The balsamic glaze can be made ahead and stored for up to a week.
