Ingredients

Ingredients
  • 4 large ripe tomatoes, diced
  • 1/4 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and freshly ground black pepper to taste
  • 1 baguette, sliced into 1/2-inch thick pieces
  • 2 tablespoons olive oil for brushing

Method

Instructions
  1. In a bowl, combine the diced tomatoes, chopped basil, minced garlic, extra-virgin olive oil, and balsamic vinegar. Season with salt and freshly ground black pepper to taste. Stir gently to mix all the ingredients and set aside to let the flavors meld together.
  2. Preheat your oven to 375°F (190°C). Place the baguette slices on a baking sheet and brush each slice lightly with olive oil. Toast in the oven for about 5-7 minutes or until the bread is golden and crisp.
  3. Once the bread is toasted, remove it from the oven and let it cool slightly. Spoon the tomato mixture generously onto each slice of toasted bread. Serve immediately while the bread is still warm and crisp.

Notes

Choose ripe tomatoes for the best flavor. Toast the bread perfectly and consider rubbing it with a garlic clove for extra flavor. You can also add grated Parmesan cheese or crumbled feta for a richer taste. Prepare the tomato mixture ahead but assemble just before serving to keep the bread crisp.
