- In a small bowl, whisk together melted butter, honey, minced garlic, olive oil, thyme, salt, and pepper until well combined.
- Place the carrot pieces and green beans in a large mixing bowl. Pour the honey butter mixture over the vegetables and toss until evenly coated.
- Spread the vegetables in a single layer on the prepared baking sheet, ensuring they aren't overcrowded for even roasting.
- Roast for 20-25 minutes, tossing halfway through, until carrots are tender and both vegetables have caramelized edges.
- Remove from oven, garnish with fresh parsley if desired, and serve immediately while warm.
Notes
Cut carrots into uniform sizes for even cooking. For thick green beans, blanch for 2 minutes before roasting. Add Dijon mustard for tang or red pepper flakes for heat.
