  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a small bowl, whisk together melted butter, honey, minced garlic, olive oil, thyme, salt, and pepper until well combined.
  3. Place the carrot pieces and green beans in a large mixing bowl. Pour the honey butter mixture over the vegetables and toss until evenly coated.
  4. Spread the vegetables in a single layer on the prepared baking sheet, ensuring they aren't overcrowded for even roasting.
  5. Roast for 20-25 minutes, tossing halfway through, until carrots are tender and both vegetables have caramelized edges.
  6. Remove from oven, garnish with fresh parsley if desired, and serve immediately while warm.

Notes

Cut carrots into uniform sizes for even cooking. For thick green beans, blanch for 2 minutes before roasting. Add Dijon mustard for tang or red pepper flakes for heat.
