- Preheat your oven to 375°F (190°C). In a large bowl, combine the sliced peaches, 1/2 cup of sugar, and cinnamon. Toss gently to coat the peaches evenly. Set aside while you prepare the batter.
- In a separate bowl, whisk together the flour, remaining 1/2 cup of sugar, baking powder, and salt. Add the milk and vanilla extract, stirring until just combined. Be careful not to overmix.
- Place the butter in a 9x13-inch baking dish and melt it in the preheated oven. Once melted, pour the batter evenly over the butter. Do not stir. Spoon the peach mixture over the batter, again without stirring.
- Bake for 40-45 minutes, or until the top is golden brown and the cobbler is bubbly. Allow it to cool slightly before serving.
Notes
Use fresh peaches for the best flavor. Adjust sweetness based on the peaches' natural sweetness. Serve warm with vanilla ice cream or whipped cream.
