  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 1 bell pepper, diced

  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley (for garnish)

  1. Heat olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook until browned on both sides, about 5-7 minutes. Remove the sausage from the skillet and set aside.
  2. In the same skillet, add the diced onion and bell pepper. Cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Add the rice to the skillet and stir to coat with the oil and vegetables. Pour in the chicken broth, honey, Cajun seasoning, smoked paprika, and black pepper. Stir everything together until well combined.
  4. Bring the mixture to a boil, then reduce heat to low. Cover the skillet and simmer for 18-20 minutes, or until the rice is tender and has absorbed most of the liquid.
  5. Return the browned sausage to the skillet and stir to combine. Cook for another 2-3 minutes until everything is heated through. Garnish with fresh parsley before serving.

Notes

Use long-grain rice for best texture, adjust Cajun seasoning to preference, and feel free to add other vegetables like corn, peas, or diced tomatoes. Stores well for up to 3 days and freezes beautifully.
