  • 1 cup sour cream
  • 1 packet ranch dressing mix
  • 1 large red bell pepper, diced
  • 1 large green bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup frozen corn, thawed
  • 1 cup black beans, rinsed and drained
  • 1/2 cup red onion, finely diced
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Method

  1. Prepare the cornbread according to your favorite recipe or using a mix. Allow it to cool completely, then cut into 1-inch cubes.
  2. In a medium bowl, whisk together mayonnaise, sour cream, and ranch dressing mix until smooth and well combined.
  3. In a large trifle bowl or clear glass serving dish, create your first layer with half of the cornbread cubes.
  4. Layer half of the bell peppers, tomatoes, corn, black beans, and red onion over the cornbread.
  5. Spread half of the ranch dressing mixture over the vegetable layer.
  6. Repeat the layers with remaining cornbread, vegetables, and dressing.
  7. Top with shredded cheddar cheese and fresh parsley.
  8. Cover and refrigerate for at least 2 hours, or overnight, to allow flavors to meld together.

Notes

For best results, use day-old cornbread as it holds up better. Allow at least 2 hours chilling time for flavors to meld. Can substitute Greek yogurt for part of the mayonnaise and sour cream for a lighter version.
