  1. Prepare the vegetables and fruit. Wash and dry the strawberries and cucumber thoroughly. Hull the strawberries and slice them into even pieces. Slice the cucumber into thin rounds.
  2. Make the dressing. In a small bowl, whisk together the honey, lime juice, olive oil, salt, and pepper until well combined. The honey should dissolve completely into the mixture.
  3. Combine the salad. In a large mixing bowl, gently toss the sliced strawberries, cucumber, and chopped mint leaves together. Be careful not to crush the delicate strawberries.
  4. Dress and serve. Drizzle the honey-lime dressing over the salad and toss gently to coat all ingredients evenly. Serve immediately for the freshest taste and crisp texture.

Notes

Use ripe but firm strawberries that hold their shape when sliced. English cucumbers work best. For best results, keep dressing separate and toss just before serving. Can be prepped up to 2 hours in advance.
