Instructions
- Prepare the vegetables and fruit. Wash and dry the strawberries, then remove the stems and slice them into quarters. Wash the cucumber and slice it thinly using a sharp knife or mandoline.
- Combine the main ingredients. In a large mixing bowl, gently toss together the sliced strawberries, cucumber, and crumbled feta cheese.
- Make the dressing. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper until well combined.
- Assemble the salad. Pour the dressing over the strawberry and cucumber mixture and toss gently to coat everything evenly. Add the chopped mint leaves and give one final gentle toss.
- Serve immediately. This salad is best enjoyed fresh as a refreshing side dish with grilled meats or as part of a summer buffet spread.
Notes
Use fresh ingredients for best results. English cucumbers work well due to fewer seeds and thinner skins. Prepare components separately if making ahead and combine just before serving. Fresh mint is essential - do not substitute dried mint. Salad is best served immediately to prevent cucumbers from becoming watery.
