  • 4 ripe peaches, sliced
  • 1 ball of burrata cheese
  • 4 cups arugula
  • 1/4 cup fresh basil leaves
  • 1/4 cup toasted pine nuts
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1/4 cup extra-virgin olive oil
  • Salt and pepper to taste

  1. Wash and slice the peaches into thin wedges. Set aside.
  2. In a large bowl, combine the arugula and fresh basil leaves. Add the sliced peaches and gently toss to mix.
  3. Tear the burrata cheese into small pieces and place them on top of the salad.
  4. In a small bowl, whisk together the balsamic vinegar, honey, and extra-virgin olive oil. Season with salt and pepper to taste.
  5. Drizzle the balsamic dressing over the salad. Sprinkle with toasted pine nuts and serve immediately.

Notes

Choose ripe but firm peaches for the best flavor. Toast pine nuts in a dry skillet over medium heat until golden brown. Serve immediately to prevent the arugula from wilting.
