  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup grape juice (as a substitute for wine)
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

  1. In a large bowl, toss the cubed beef with flour, salt, black pepper, garlic powder, and onion powder until evenly coated.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the beef in batches and sear until browned on all sides. Remove the beef and set it aside.
  3. In the same skillet, add the diced onion, carrots, celery, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
  4. Pour in the beef broth, grape juice, and Worcestershire sauce. Stir to scrape up any browned bits from the bottom of the skillet. Add the thyme and rosemary, then return the beef to the skillet. Bring to a simmer, cover, and cook for 1.5 hours or until the beef is tender.
  5. Stir in the frozen peas and corn, and cook for an additional 5 minutes. Remove from heat and let the filling cool slightly.
  6. Preheat your oven to 375°F (190°C). Transfer the beef filling to a deep pie dish or baking dish. Roll out the puff pastry sheet and place it over the filling, trimming any excess. Brush the pastry with the beaten egg for a golden finish.
  7. Bake for 25-30 minutes, or until the crust is golden brown and flaky. Let it cool for a few minutes before serving.
