Ingredients

Ingredients
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins (optional)

Method

Instructions
  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats to prevent sticking.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This should take about 2-3 minutes using an electric mixer.
  3. Beat in the eggs one at a time, ensuring each is fully incorporated. Add the vanilla extract and mix until combined.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  5. Using a spatula or wooden spoon, fold in the rolled oats and raisins (if using) until evenly distributed throughout the dough.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers look slightly underbaked.
  7. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or store in an airtight container for up to a week.

Notes

Use room temperature butter for the best texture. For chewy cookies, remove them from the oven when the edges are set but the centers are still soft. Customize add-ins like chocolate chips or nuts for a personalized touch. Chill the dough for thicker cookies.
