  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat and set aside.
  3. In the same skillet, add the chopped onion and garlic. Sauté until softened. Add the diced potatoes, peas, and carrots. Cook for 5 minutes, stirring occasionally.
  4. Stir in the beef broth, tomato paste, thyme, rosemary, salt, and pepper. Mix well and let it simmer for 10 minutes until the potatoes are tender.
  5. Transfer the beef and potato mixture to a pie dish. Roll out the puff pastry and place it over the filling. Trim any excess pastry and crimp the edges to seal. Brush the top with the beaten egg for a golden finish.
