  • 8 oz cream cheese, softened
  • 1/2 cup buffalo sauce
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup green onions, chopped
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste

  1. Preheat oven to 375°F (190°C). Shred cooked chicken into bite-sized pieces using leftover roasted chicken, rotisserie chicken, or poached chicken breasts
  2. In a large mixing bowl, combine softened cream cheese, buffalo sauce, ranch dressing, garlic powder, and onion powder. Mix until smooth and well-combined
  3. Fold in shredded chicken, 3/4 cup of cheddar cheese, and half of green onions. Mix gently until ingredients are evenly distributed
  4. Transfer mixture to baking dish and spread evenly. Top with remaining cheddar cheese and mozzarella cheese. Bake for 20-25 minutes until bubbly and cheese is melted and golden
  5. Remove from oven and let rest 5 minutes. Garnish with remaining green onions. Serve warm with tortilla chips, celery sticks, carrot sticks, or crusty bread

Notes

For best results, use room temperature cream cheese to avoid lumps. Can be prepared up to 24 hours ahead and refrigerated before baking. Adjust buffalo sauce heat level based on preference - start mild for mixed crowds.
